And all because preparing okroshka is very simple, from available ingredients and it is very nutritious and tasty. Inventing more and more new versions of okroshka, housewives of the 18th century introduced several directions of classic okroshka: with smoked meats (sausage), with meat, with fish.

The most budget-friendly and popular version of okroshka is using sausage and water as broth. In this case, you will need to prepare:

  • a bunch of greens – about 100 grams;
  • 5 pre-boiled eggs;
  • about 250 grams of fresh radishes;
  • two tablespoons of fat sour cream;
  • 4 medium-sized fresh cucumbers;
  • about 300 grams of boiled sausage or ham;
  • 0.5 liters of boiled cold water;
  • a tablespoon of vinegar;
  • salt and ground black pepper.

The greens are a mixture of parsley, dill and green onions. Chop the greens into small pieces with your hands, so they will give less bitter juice. Cut the sausage into cubes and chop the remaining ingredients using a coarse grater.

Place all cooked foods in a ceramic tureen or any other saucepan.

Season the ingredients with sour cream, salt, add water and first pour in half a tablespoon of vinegar. Then taste the okroshka and gradually add sourness to taste.

This classic okroshka recipe can be made more piquant and unusual in taste. To do this, instead of sausage, add chopped pork shish kebab to the soup.

Remember this method for making cold soup in case you have some cold meat left over from your picnic. It will be appropriate in okroshka, and thanks to the vinegar it will become softer.

  1. lemon;
  2. five large radishes;
  3. large fresh cucumber;
  4. a bunch of green onions and dill;
  5. about 200 grams of ham or boiled sausage;
  6. two medium potatoes, pre-boiled in their jackets;
  7. three eggs;
  8. about 300 grams of sour cream, about 25% fat;
  9. up to three liters of table mineral water.

First, prepare the greens: chop them finely, put them in a tureen, add plenty of salt and pour in the juice of one lemon.

Cut the sausage, eggs and potatoes into small cubes. Coarsely grate the cucumber and radish. Add all the products to the greens, add a liter of mineral water, add all the sour cream and mix.

Taste the soup and add salt or table water if necessary.

The dish will be satisfying and will appeal to all household members, the lemon will add sourness to it, and the mineral water will pleasantly complement the taste of the food.

Okroshka: classic whey recipe

Whey is a healthy and dietary product. It separates during the cooking of the cottage cheese and has a pleasant sourness.

The recipe for classic okroshka initially included whey as a broth, and later this ingredient was replaced with others.

To prepare this dish you need to take:

  1. a small bunch of dill;
  2. liter of whey;
  3. about 350 grams of boiled sausage or ham;
  4. about 10 medium radishes;
  5. five medium boiled potatoes (it is best to boil them in their skins, this will give a richer taste);
  6. five medium cucumbers (preferably crispy ones);
  7. six hard-boiled eggs;
  8. approximately 300 grams of homemade or full-fat sour cream;
  9. salt and pepper.

Chop all ingredients except radishes and herbs into small cubes. Grate the radishes on a coarse grater. Mix the crushed products with sour cream and radishes. Season with salt and add whey. Chop the dill as finely as possible and after you pour the okroshka into bowls, sprinkle each portion with dill.

If you need okroshka (recipe) “Classic with sausage”, which turns out thick, then you won’t find a better option with whey. It has a soft sourness and delicate taste.

This cooking method is good because, if desired, you can replace the sausage with boiled beef, and the result will be no less tasty.

Classic recipe for okroshka with sausage on kefir

Kefir is in second place in popularity among broths for okroshka. It gives it thickness and makes the taste richer.

The classic recipe for okroshka with kefir includes vegetables, herbs, eggs and sausage. It is best to choose the highest quality boiled sausage for cooking, which has no fat and is packaged in a natural casing. Its color when cut should be gray-pink.

This is the kind of sausage that will make your dish taste pleasant. You should not choose cheap and low-quality varieties of sausage, because they will give the dish an unpleasant aftertaste, which kefir will only enhance. If you wish, you can purchase tender ham, it will also be appropriate.

You will need the following ingredients for kefir okroshka:

  1. a bunch of dill, parsley and green onions;
  2. four boiled eggs;
  3. 300 grams of boiled sausage;
  4. four fresh cucumbers;
  5. four large boiled potatoes;
  6. six medium radishes;
  7. about half a glass of sour cream;
  8. dessert spoon of table mustard (without a slide);
  9. about a liter of kefir.

The classic recipe for okroshka with kefir is distinguished by its dressing. As you already noticed, you will need mustard for it, but you also need to set aside three yolks in advance. Chop the whole egg and three whites into very small cubes. Do the same with potatoes and sausage, and grate the cucumbers and radishes on a coarse grater.

The use of greenery is also unusual in this method. Finely chop the green onion and grind it with salt. This preparation should produce juice, which will then give your soup an unusual and rich taste. Chop the dill and parsley.

Now let's start mixing the ingredients. Mix grated vegetables in a cup with chopped egg white, sausage and egg.

Prepare a dressing from sour cream, crushed yolks, a quarter of chopped dill with parsley, salted green onions and mustard. Add a little salt and ground black pepper to this dressing.

This okroshka is prepared with kefir in portions. Place a few tablespoons of salad mixed in a bowl on each plate. Then pour kefir over this preparation and add a tablespoon of dressing. Sprinkle with the remaining chopped herbs.

The only drawback of this recipe is that each member of the household will have to try and adjust the taste of okroshka on their own. Be sure to put kefir on the table in a jug, several bowls: with mayonnaise, the rest of the prepared sauce, mustard, sour cream. Add spices: salt and pepper.
